Poor Man's Stew If you ever have one of those days you know is going to be busy-this is a great dinner to make and it is easy too. I knew yesterday it was just one of those kind of days well before it started. Plus I get bored trying to come up with something new to whip up to feed the camp! I named it poor mans stew when I wanted to make stew for dinner one night and didn't have stew meat so I made due with what I had. When the kids asked whats for dinner I made the name up on the spot. This can be made with chicken or turkey(ground or chunks) And you can substitute rice for the potatoes. Add any other favorite veggies too. I used a crock pot but you can also use a dutch oven or casserole pan in the oven.
A great hearty dinner on a cold night~
And it smells so good cooking through out the day!
1 1/2 lbs. of ground beef
1 med. onion-chopped
2 cloves of garlic-crushed
6-8 carrots cut up
1/12 cups frozen peas
4 very large potatoes (or 6 small-med)-chopped large chunks
1 teaspoon salt, 1/2 teaspoon pepper, 1/4 teaspoon celery seed(optional)
1 tablespoon chopped parsley flakes, 1 bay leaf
4 large-bullion cubes or 6 small
Brown ground beef with garlic and onions. Dump all ingredients together in pot. Cover with water just above all ingredients. If you use a crock pot cook on low all day or on high for at least three hours. Can be cooked on the stove top on low or in the oven 350 degrees.
I like to thicken the sauce with a little water and flour.
And serve it nice and hot with fresh baked biscuits and jam-Yum!
